The traditional cuisine of the Moskovskaya Kukhmisterskaya restaurant is a diamond polished by experienced masters. Old recipes, taken from archives, letters and books, found new life at least two centuries after the oblivion. Thanks to consultants Olga and Pavel Syutkin, the Russian cuisine historians, the restaurant menu features a range of forgotten dishes. Finally, today guests can have a meal that the 19th century's middle class Muscovites used to enjoy.
All the dishes are divided into unconventional sections. The waiters will be more than happy to explain the details. The name itself is no ordinary: the "Kukhmisterskaya Book". It used to be the name of a recipe book from a Küchenmeister (chef). For example, besides side-dishes for vodka that used to be an aperitif in the Russian mansions, the "Postavets" section has stuffed pike perch heads with marinade sauce. Kundyums with mushrooms and buckwheat, Ural shurubarks and Kuban shtrumbs are featured in the dumplings section.
Special "mayonnaise" salads make room for creativity: guests can choose the filling (duck, veal, smoked chicken, salmon or beef tongue), one of the four types of dressings, and even the slicing technique (large or small pieces). The dishes made in the smoke house, stove or on the griddle are the restaurant's staple. Along with authentic recipes, the Moskovskaya Kukhmisterskaya restaurant uses also old-time cooking techniques. Try lamb ears in a pot, Ural shurubarks, posikunchiki or karasiki. The ordinary ingredients, prepared using the traditional techniques, obtain a whole new taste.
The variety of Russian sweets will surprise even the most discerning gourmets. There are dry desserts that can be eaten with fingers and wet ones that need flatware. The restaurant also offers a plate of mixed candies for tea, ice-cream, and sorbets.
The bar menu, just like the restaurant one, bears an unusual name – the "Ambar Book". Two centuries ago, such a book was kept almost in every city house or mansion. It included information on all the purchases and stock. The Kukhmisterskaya "Ambar Book" keeps record of the remaining drinks.
To sum up, Moskovskaya Kukhmisterskaya has a lot to offer in terms of food, drinks, and entertainment!
